What is Cachaça?
Cachaça is a Brazilian spirit which is made from fresh sugarcane juice. In Brazil, the spirit has to contain between 38% and 48% alcohol.
The history of cachaça
Even though cachaça has become trendy in Europe recently, the spirit has been around for almost 500 years, which makes it older than rum whose production began around 1600. Although the origin of cachaça can’t be traced back completely, most historians agree that the invention of the spirit happened accidentally on a sugarcane plantation. Indeed, cachaça was regarded as a slave drink in the first few years after its discovery. However, it didn’t take long before the Portuguese discovered the tasty spirit for themselves.
In the 17th century, cachaça spread through the whole country. According to legend, white cachaça was brought in casks to Minas Gerais, which not only changed the aroma but also made the spirit take on the colour of the wood. This is how Minas Gerais became one of the most important places for the maturation of cachaça.
How is cachaça produced?
First, the sugarcane must be pressed to extract the juice. The juice then goes through a filtering system and is collected in tanks for fermentation. Many producers add a ferment, for example corn flour, rice bran or rice flakes, to speed up the fermentation and influence the flavour of the cachaça. As soon as the fermentation is done, the cachaça can be distilled.
There are two kinds of cachaça: aged and non-aged. Non-aged cachaça is also known as white cachaça and carries terms like “branca” or “prata” on its label. Aged cachaça stands out for its golden colour and is often designated with “amarela” or “ouro”.
Due to its simpler production, white cachaça is cheaper and less complex in its aroma. That’s why the non-aged spirit is perfectly suited for the creation of mixed drinks.
Golden cachaça, however, should be enjoyed on its own. Most aged cachaças are stored in casks for up to three years, while some premium cachaças can mature for up to 15 years.
How do you drink cachaça?
As mentioned above, cachaça can be enjoyed pure – this is particularly the case with aged cachaças. Non-aged, white cachaça, however, is usually used to create delicious mixed drinks. The most popular cocktails include Caipirinha, Batida, Rabo-de-galo and Quentão (also known as “Hot Stuff”).
