The location

El Dorado Rum is produced by Demerara Distillers in Guyana. The distillery lies in the historical Demerara area, which is known for its aromatic sugar. Rum has been produced in this region since the 17th century. A hundred years later, more than 300 sugar cane distillers were creating their own rums. The rum production surged even more after the import of more advanced distilling equipment. Today, rum and molasses are still some of the most important export goods of the South American state.

The history of El Dorado Rum

The success of El Dorado rum is deeply connected with the development of the rum production in Guyana. The abolishment of slavery in the 19th century and the distribution of other spirits like whisky and gin led to many original distilleries in Demerara to be shut down. The distilleries that were left stood out for their high-quality, unique rums. Changes in the rum and spirit industry also resulted in rum becoming a drink of the middle class.

In the 20th century, more and more distilleries joined forces to get a competitive advantage. In 1998, Demerara Distillers Ltd acquired the last rum production plant east of the river Demerara. The founders made a great purchase, as the distillery contained original stills that were used on sugar cane farms in the 18th and 19th centuries.

For about 20 years now, El Dorado rum has been produced by this distillery and has managed to establish itself in the international rum market. One reason for the success of the brand lies in the company’s focus on creating premium rums that mature in oak casks for many years.

Of course, El Dorado rum is produced with Demerara sugar. The sugar cane grows on the banks of the Demerara river and is harvested twice per year. It is then transported to the sugar factory on barges.

The molasses which is required for the production of rum is created by cooking sugar cane juice. The fermentation of the molasses takes up to 26 hours. This is done with selected yeast cultures, which influence the aroma and the fermentation process.

At this time, the alcohol content of the wash is around 7%. After the sugar has been converted into alcohol, the distillation can finally begin. For this, continuous stills from the 18th and 19th century are used, including the last remaining wooden Coffey still.

After the distillate has been transferred into handmade casks, it is stored for several years in the tropical temperatures of Guyana, which is how it develops a complex and harmonious flavour profile. El Dorado rums showcase an age between three and 25 years, which makes them suitable for every taste.

After maturation, the master blender creates the final blend.
